My New Years African Dinner

This morning i was awaken, by the aromatics of fresh toasted and grind (cumin seeds 1 tbsp, whole black pepper corns 2 tsp, coriander seeds 2 tsp, cardamon seeds 10 and whole cloves 3). mix with (cinnamon 2 tsp, smoke paprika 2 tsp and nutmeg 2 tsp). Known as Baharat spice blend or was it the (3 tsp of cumin seeds, 1 cp coriander seeds, 2 tbsp caraway seeds,and 1 tbsp of crushed red pepper or 1/2 tbsp of cayenne pepper). Known as Tabil maybe it was the Ras El Hanout spice blend made of (2 tbsp black pepper corns. 1 tbsp cumin seeds, 1 tbsp coriander seeds, 10 cardamon seeds 5 whole cloves, ground ginger 1 tbsp, cinnamon, 1 tsp nutmeg, 1 tsp cayenne pepper, 1 tsp turmeric, 1 tsp salt). Well as i reach down stairs to see nothing on the stove, the dinner table is empty. I realize it was just a vision of whats to come for the day. Well its now time to bring this vision to the table. i’ll make the mix for my akkras (black eyed-peas) fritters. After soaking the peas over nite in cold water rinse and remove skins about two cups will do. Small dice half a large onion, 3 garlic cloves, one tbsp of fresh chop parsley, 1/2 scotch bonnet seeded, salt and pepper to taste and 1/4 cp of fine ground corn meal (yellow or white). set aside for frying just before service. Now i will marinate 3 lbs of fresh beef cut for stew in the Baharat spice blend (for more intense flavor let set over nite). in stew pot heat red palm oil add some Baharat spice to slowly cook to release aromatics. add one large onion sliced and 1/4 cp smashed whole garlic cloves sweet until tender. add 12 springs of fresh thyme and 4 bay leaves. bring heat up to med high add meat stir do not burn add 1 cp of beef or vegi stock or water when stew comes to boil reduce heat to med low let cook for 45 min. add  carrots and turnip roots cook for about 1 1/2 hours or until meat is tender. Now for the mutton stew using the Ras El Hanout follow the same steps for the Beef stew the mutton will however take longer to cook 45 to a hour.( add tomatoes and carrots last 45 min) . Now for the black-eyed peas, sweet 1 large diced onion and 4 cloves of fresh smashed and dice garlic in 2 tbsp of red palm oil add one tsp crushed red pepper flakes, 6 springs of thyme, 2 bay leaves let sweet about 1 min. add 2 cps pre soak black-eyed peas. stir add 1 1/2 cps water or enough to cover peas about  1 in . bring to boil then let simmer about 45min to 1 hour or until peas are tender .the last 20 min before done add large dice butter nut squash and whole okra.adjust salt and pepper to taste. it’s now time to heat oil in heavy large skillet and fry spoonfuls of the batter at a time for 3 to 4 min or until golden brown. don’t over crowd pan.             please enjoy .  careful not to bit tongue, fingers, spoons or forks..
