Lentil soup and Lentil loaf

Simple goodness and plenty savory flavor came come from vegan cuisines. This is a dish i came up with for vegans lovers.

Lentil soup

1 lg carrot sm dice

1 lg onion sm dice

3 cloves garlic sm dice

3 bay leaves

4 springs of thyme

1 1/2 cp of green lentils

1 qt low sodium vegetable broth

In 3 qt pot bring broth to a boil add all except lentils.

boil about 15 min or until carrots or about soft 

rinse lentils

reduce heat to low simmer add lentils

gently cook for about 15 min or until tender.

Lentil loaf

using one cup of the lentil soup drained and packed let cool

once cooled add 1 cup of bread crumbs, 2 tsp of small dice carrots, to food processor or blender lightly mix

don’t over blend

make in to loaf shape glaze with hoisin sauce or what ever you like bake in oven for 45 to 50 min .
